One night James was thinking “what if I made a sauce inspired by a volcano? Vesuvius? And that was the flash of inspiration which reminded him Naples is in the shadow of Vesuvius, and the classic, spicy, pasta Puttanesca comes from its back streets! and here we are.
With loads of tomato, olives, garlic, capers, basil and parsley, and of
course, his fermented chillies, this sauce is full of herby, umami goodness, and a dash of lava.
Perfect for pizzas, pastas, toasties, or over plain spaghetti with a little extra virgin olive oil.
